“Oh, the weather outside is frightful…”
Yes, we have had snow! OK, it was just big, wet, sloppy snow-rain globs that lasted about 5 minutes, but technically, it was snow. And for two mornings, there has been snow on the higher hills. Yesterday it started raining, that cold, bone chilling rain that is the true Umbrian fall weather, and today has been more of the same.
It produces an irresistible urge to eat soup, to make sugo, to have warm homey smells in the house. Even though we won’t be able to eat any of this tonight, and we will have to wait until our day off tomorrow, I had to start a chicken stock pot and a pot of pork based meat sauce. I usually make my meat sauces in a terra cotta pot, in the oven, because I can control and use much lower heat than I can on the stove top. Low heat and long cooking time is the secret to a full bodied sauce.
The other secret is that I brought home some of that 2003 Agrigolas Cannanau, so we can drink some equally full bodied.

I made chicken stock yesterday as well (great minds and all that) – getting ready for a nice farro soup which I’ll make for dinner tonight…might even throw some (dried) porcinis as well as their soaking liquid into it. Should go nicely with a green salad and some crusty bread, don’t you think?
