One NYC butcher required that I buy an entire crate. I like steak, but not a crate-worth. The butcher shop over at Chelsea Market, Dickson’s Farmstand Meats, was interesting. I happened to walk in just as they were breaking down a side of beef and the butcher chopped one off for me. Timing is everything, but lurking outside the butcher’s waiting for the right moment seems excessive. Even for me.
Sometimes you discover the solution has been there all along: Ottomanelli’s in the West Village. They’ve been around for awhile: 110 years. Which is pretty impressive and it means they know a thing or two about meat. Eureka: they have tri-tip, all the time, for $7.99 lb.
Seared, herbed and oiled. A great cut of meat and most satisfying meal.
